Sweet Sour Chicken

During our visit to Malaysia recently, Matthew has been requesting to have sweet sour pork almost every day. Today I have decided to cook this famous sweet sour pork meal but I used chicken pieces instead of pork.  Here is the recipe:

Ingredients:

900g chicken meat cut into cubes

Marinade Ingredients for the Chicken:

2 tbsp of light soy sauce

1 tsp of pepper

1 tsp salt

2 tsp sesame oil

2 tbsp tapioca flour

1 egg

 

100g Cherry tomatoes

1 cucumber sliced thinly

1 slice red capsicum

1 slice green capsicum

1 slice yellow capsicum

1 minced garlic

2 cups of oil

 

Sweet  Sour Sauce Ingredients

5 tbsp tomato sauce

2 tbsp sour plum sauce

3 tsp sugar

1 tsp salt to taste

1/2 cup water

Method:

Marinate the chicken meat with the marinade ingredients for 2 hours.

Next, coat the marinated chicken pieces with rice flour and fry in the 2 cups of hot oil until golden brown, then set it aside on a plate which has been lined with paper towels.

Then, place 1 tbsp of cooking oil in the wok and stir fry the garlic until aromatic and add in the sweet sour sauce and follow by the fried chicken pieces and the veggies. Give all of them a good mix and continue to stir.

When the sauce thickens, reduce the heat to low heat and dish out the sweet sour chicken.
