Last weekend I was craving for ayam percik. It is a kind of grilled chicken marinated in spices and coconut milk. You eat it with steamed rice and is an easy meal to prepare, especially if you have the spices and an oven (or an air fryer). Here are the ingredients for ayam percik.
7 pieces of chicken thigh
1 large onion
8 cloves of garlic
1 tbsp of ginger
2 stalks of lemongrass. The white bulb of the lemongrass.
I teaspoon of turmeric powder
2 cups of coconut milk
1 cup of palm sugar
1 tbsp of sugar
2 tsp of salt
Blend all the above spices and add coconut milk, palm sugar, sugar and salt
Boil the mixture or gravy at low heat for about 20 minutes or until the gravy thickens.
Next, use the gravy to marinate the chicken thigh for at least one hour or overnight.
Finally, grill the chicken thigh on fan grill at 200 degrees Celcius for 20 minutes.
